BMJ：油炸食物与全因、心血管及肿瘤死亡风险

研究认为，油炸食品，特别是炸鸡和炸鱼类，导致女性全因死亡及心血管死亡风险增加

近日研究人员就美国女性个人油炸食品消费与全因及特异性死亡风险之间的关系进行了考察。

1993-98年间，106966名50-79岁的绝经后女性参与研究，随访至2017年2月，研究的主要终点为全因、心血管及肿瘤相关死亡。

1914691个随访年中，总计31558人死亡。考察所有油炸食品时，相比于不消费油炸食品的人群，每日消费1份油炸食物的人群，其全因死亡风险的比值比为1.08，心血管死亡风险为1.08。考察炸鸡类食品时，相比于不消费炸鸡人群，每周消费1份炸鸡人群的全因死亡比值比为1.13，心血管死亡风险为1.12。考察炸鱼/贝类食品时，相比于不消费人群，消费人群的全因死亡比值比为1.07，心血管死亡比值比为1.13。未发现油炸食品与肿瘤的相关性。
