这一研究结果日前发表在美国《科学公共图书馆·遗传学》杂志上，为从分子层面理解发酵食物的益处提供了视角，同时将有助寻找治疗炎症性疾病潜在的药物靶点。

细胞受体是一种蛋白质，当匹配的分子与细胞结合时，它允许特定的信号进入细胞。大多数动物只有两种HCA受体，但人类和类人猿体内还存在第三种HCA受体。研究人员发现，一种由乳酸菌产生的代谢产物D-苯基乳酸可以与第三种HCA受体结合，并向免疫细胞发出信号，触发免疫细胞活动。

研究认为，第三种HCA受体最早出现在人类和类人猿共同祖先体内，这一进化特征改变了人类祖先的饮食习惯，使他们开始食用发酵食物，比如已开始腐烂的水果等。

论文作者之一、德国莱比锡大学研究人员克劳迪娅·施陶贝特说，未来他们将进一步研究揭示乳酸菌代谢产物D-苯基乳酸如何影响免疫系统。
